I made a really simple dinner tonight, but it was really delicious so I figured I would share.
I made a low carb meatloaf. I took a pound and a half of lean ground beef, some chopped spinach, one whole chopped onion, half cup of shredded Italian cheese, rosemary and Italian seasoning with two egg whites. It was fantastically scrumptious.
Jessica brought over fresh mozzarella that we chopped on top of spinach and sprinkled with balsamic vinegar. It was one of those nights were things just kind of came together.
In other news I spent my day just kind of cleaning, organizing and playing. Not too much to report. The highlight of my week is that I found a fabric softener that won't aggravate Zoe's eczema. Whoo hoo, yup, that's right folks, my life is GLAMOROUS!
Zoe's school had a Thanksgiving play today, so she is quite obsessed with helping Tom the Turkey escape from the farmer. We also had a bit of an incident where she decided to color on my computer, because it is pink and she had a pink crayon and in her words "they were exactly the same". Big time out for that one, I think it lasted about ten minutes on her bed alone.
Peanut butter cookie update: Chris got them and they made it through the shipping process so a big thank you to everyone who helped me with recipes or shipping tips.
